White Chicken Chili

Here is a very yummy chili recipe! I got this from my friend Mary, who brought this to a church chili cook off years ago. Well, everyone raved and I had to agree. It is delicious! She had tweaked it quite a bit from a recipe I believe she found online. I have tweaked it even a little more for our family recipe! Here goes!

White Chicken Chili

3-4 T olive oil
2 med onions, chopped
4 large cloves of garlic minced
1- 7oz can of chopped mild green chiles, (you could also use 2- 4oz cans)
6-8 cups chopped, cooked chicken breasts
2 teaspoons ground cumin
1.5 teaspoons dried oregano
1/8th teaspoon cayenne pepper
4- 16 oz cans great northern beans, drained and rinsed
6 cups chicken broth (I use 3 cans chicken broth and add 3/4 cups of water)
6 cups monterey jack cheese, divided
sour cream

1. Heat oil in a large pot until fragrant
2. Add chopped onions and saute until translucent, about 10 minutes
3. Add garlic, chiles, chicken, cumin, oregano, and cayenne pepper
4. Saute 2 minutes
5. Add beans and chicken broth
6. Bring to a boil, reduce heat and simmer 2 or more hours
7 Add 4 cups of grated cheese
8. Stir until thick and melted
9. Season with salt and pepper
10.Serve with remaining cheese and sour cream for toppings
